HCG VEGETARIAN RECIPES





*EGG SALAD WRAP

3 Hard boiled eggs
½-1 T Mustard
Salt
Pepper
May add 1T milk (optional)

Boil Eggs – Add to water until rapid boil, reduce heat to med-high, boil 10 minutes
Crack eggs
Discard 2 yolks
Mash eggs with fork to desired consistency
add mustard, salt and pepper

Wrap in romaine leaves 1 or 2

*note eggs are not on Dr. Simeon’s original protocol, however people with allergies to fish, beef or chicken may want to add eggs as an additional protein. I personally am allergic to all fish and added eggs after the first week of phase 1 with no problem. Also for the vegetarian protocol.


CREAMY ZUCCHINI SOUP
(can substitute spinach for zucchini)
~One Filling Serving~

about 1/4 cup chopped videlia onion
2 T of minced garlic
Saute in an nonstick skillet with a little bit of veggie broth (1/4 cup)-it will evaporate so stay close-
Cook until almost carmelized

Slice one zucchini (about 1 1/2 cups sliced) and chop in blender with just enough veggie broth (1/4 cup) to make blender work.

Pour into skillet with cooked garlic and onion set aside

In empty blender-(just rinse it out) add 1/4 cup low-fat cottage cheese with about 1/2 cup veggie broth and blend until liquid.

Pour this also into the skillet and cook on med-high until a lot of broth is evaporated.

Put back in the blender and blend until thick and 'creamy'. Salt and pepper to taste.

This will work for spinach too. Vegetarian Protocol.


FAUX POTATO SOUP

2 cups organic stock
1 small bag frozen cauliflower

Sea salt/pepper
Cayanne for some kick
Italian seasoning mix
Garlic

Add the seasonings above to 2 cups stock & bag of cauliflower. Let cook until cauliflower is almost MUSH. Then scoop out into single server blender, add some of the broth and/or a little water. Puree.....pour back into remaining broth.

Delish!



PROTOCOL EGG DROP SOUP

2 cups of fat free organic veg. broth (or 1 cup broth and 1 cup water)
dash of garlic powder - to your taste & liking
2 tsp. Braggs Liquid Amino Acids
3 drops of Tabasco (may omit)
salt/pepper to taste
3 egg whites + 1 whole egg
Green onions, thin slices of green section

I have also added Bok Choy with no issues, yum.

In a small sauce pan, bring broth/water, Braggs, spices & Tabasco to a boil. While waiting for boil, whisk eggs together quickly until fluffy. Once broth boils, pour eggs into saucepan and cook for another minute. Pour immediately into a bowl and serve - garnish with green onions. 1 Protein, 1 Veg


Crunchy Spinach Chips

Spinach leaves (washed and paper towel dried - you want them a little damp.
Sea salt or whatever seasoning you like sprinkled over.
Spread leaves on parchment paper and bake at 225/250 until dry and crunchy 15 or 20 minutes

Asparagus Lasagna

Allowed amount of asparagus cut in half lengthwise
1/2 can no sugar 100% diced tomatoes
100g Cottage Cheese
Garlic and Onion powder to taste
Fresh chopped basil

As a vegetarian who mixes veggies, add a layer of spinach too!

Oven at 350'

Drop asparagus into boiling water until bright green, about 1 minute
In small casserole dish layer 1/2 asparagus, top with 1/2 tomatoes, and one half cottage cheese, add chopped basil, repeat. Sprinkle with seasonings.

Cover and bake until heated through about 15 minutes, serve with a grissini stick.

I just made this up, sounds really good but haven't tried it yet? Lemme know what you think :)


Cucumber Apple Salad Recipe

-1/2 chopped apple

-1 sliced cucumber

-2 T. apple cider vinegar

-1 T. water

-garlic salt

-pepper

-Stevia (opt)

1.Chop apple and slice cucumber in thin pieces.

2.Combine vinegar and water.

3.Season with garlic salt, pepper and Stevia (opt) to taste.


Asparagus Frittata
•3 egg whites
•1 whole egg
•asparagus (allowed amount)
•1-2 cloves minced garlic
•1 T dehydrated minced onion
•1 T water
•1 t parsley
•salt/pepper (to taste)
•tabasco (optional)
1. Preheat pan over MED heat.
2. Snap woody ends off asparagus and discard.
3. Snap each asparagus spear into 2-3 pieces. Add to pan with garlic & heat through until tender.
4. Preheat oven to 400.
5. In bowl, mix eggs & water. Add asparagus, minced onion, parsley, salt/pepper.
6. Pour egg mixture into non-stick baking dish (or dish lined with parchment paper).
7. Place in oven and cook 10-15 mins until done.
8. Top with tabasco (optional) and serve immediately.



P2 Egg Recipe
Hard boil your 4 eggs, discard 3 yolks.
Mash 1 white with the allowed yolk, add a bit of mustard, lemon juice, and/or franks hot sauce.
Add 1tb of cottage cheese, blend well and stuff back into the remaining whites.
Fantastic and filling!
Alternately, mash the 3 whites and 1 whole egg together with the above seasonings and stuff into a lettuce cup.


EGG SALAD WRAP - For vegetarians ie: cottage cheese not protocol.

one hard boiled egg, 2% lowfat cottage cheese (I measured the egg and added enough cottage cheese to equal the 100 g) then I added 1 Tablespoon of skim milk and some seasonings (I used Beau Monde, dehydrated onions, and salt). I mixed this in my Magic Bullet mixer and then wrapped it in a leaf of lettuce.

2oz cottage cheese (1% or 2% cottage cheese)

Beat together the 2 egg whites and one whole egg, and pour over the asparagus, swirling the pan to cover the bottom evenly. Cook for 3-4 minutes until your egg is almost completely cooked through.

Spoon cottage cheese over 1/2 of the omelet, and fold the omelet in half in the pan. Heat through for another 1-2 minutes and then turn out onto a plate. Serve Hot!

  1. Wow. I don't know where you came up with these recipes, but half of them are totally off protocol. You can have one protein source per meal, no more. That means you can't mix eggs & cottage cheese; you can have one or the other. And you can't mix vegetables either. Simeons specified ONE vegetable per meal. He also specified that if the food wasn't listed in the protocol, it was not allowed. Zucchini & cauliflower are NOT ALLOWED. You put these recipes out without explaining that they are not protocol. I wonder how many people cheated on the diet thinking you had published recipes that are actually P2 compliant. Simeons spent 20 years researching what foods caused the most weight loss. Sure, you may still lose some if you cheat, but you could have lost so much more had you followed the protocol. At least put a disclaimer on the page to warn people that you don't believe in the original diet but prefer to do it your own way. You should change your website to "Bastardization of Simeons HCG Protocol." At least people would know you promote BS.

    1. Zucchini and Cauliflower are both listed on the protocol given to me by my physician, who also told me I could mix vegetables. The diet is working great for me by following his guidelines.

  3. My Dr version also allowed zucchini (once a week) and mixing of veggies. No protein mix though. Eggs once a week. I think track exactly what you eat and note patterns should lead to success. I'm on D14VLCD and have shed 11lbs and am thrilled. Thank you for these great options to mix it up these final 16 days VLCD. Appreciate your willingness to share!

  4. Thank you for your recipes - I don't care if they're off protocol as long as they work! Simeon's protocol was back in the old age where they didn't know Kale was a vegetable ;) I've done HCG a few times with great success and tried different things - some worked for me but not my hubs and vice versa.

  5. Definitely should be careful with these! I think since they aren't original protocol you should try one off protocol meal at a time and see if it works for your body the next day. I added 1/2 a (pea protein) beast burger made into 2 wraps for dinner to my plan and a little tofu @ lunch, and actually lost 3 lbs in one day because of all the protein. I could've just as easily gained, but it worked for my body!

    1. P.S. the wraps were made with mustard, lettuce, pickle, and tomato--no bread products! I also avoid the grissini sticks and melba. Lost 50 lbs last year gained a little back but have lost at least 15 lbs in my current round and am only 10 away from goal!

  7. As a vegetarian it is really annoying to see chicken broth listed as an ingredient on a "vegetarian" recipe. I know I'll just substitute water or veggie broth, but on principle, it is annoying.

    1. I can see how that can be annoying... I got these recipes ages ago and didn't think anyone still looked at this blog. I'll switch it out with veggie broth when I get a chance.
